NAPA AVOCADO TOAST

Our Napa Avocado Toast is a unique twist on the traditional savory avocado toast recipes. This Napa inspired toast brings together fresh avocado, lemon, dried cranberries, and crunchy salt and pepper pistachios, resulting in a beautiful balance of flavors that burst in your mouth on the first bite.

Ingredients

Instructions

  1. Zest lemon and set aside. Then squeeze the juice from the same lemon and set aside (keep zest and juice separate).
  2. Toast bread. While your bread is toasting, cut and scoop out avocado and add half into a small glass mixing bowl. Mash the avocado in the bowl. Cut the other avocado half into cubes, and set aside.
  3. Shell and very roughly chop pistachios. Then very roughly chop dried cranberries (or keep them whole, if you prefer).
  4. To the mashed avocado, add lemon juice, 1 pinch (or to taste) of Himalayan salt, and 1 pinch of ground black pepper, and mix gently to combine. Then add pistachios and cranberries, and gently mix. Once fairly evenly combined, gently fold the cubed avocado pieces into the mash (see Note #2).
  5. When the bread is done toasting, cut each slice diagonally and keep them together (see Note #3). Spoon about ¼ of the avocado mixture onto each diagonal slice and gently spread to cover the bread. Sprinkle prepared toasts with the remaining pinch of Himalayan salt, and lemon zest. Optional - Garnish with a few chopped pistachios and dried cranberries. Serve immediately and enjoy!

Notes

  1. Of course, you can use any type of roughly chopped nuts, but our favorite nut to use in this recipe are these salt & pepper roasted pistachios.  An alternative to pistachios are walnuts, which pair quite well with the combination of flavors in this avocado toast recipe. 
  2. The mash is supposed to be chunky, so make sure to wait until the end to gently combine avocado chunks with the mash, so they do not completely break down. This method will yield a much chunkier avocado spread.
  3. Slicing bread before spreading the avocado mixture, makes it easier to prepare and serve.

Step by Step Instructions

PREPARATION

Organize all your tools and ingredients before you begin. Getting all your ingredients in one place at the beginning will shorten your prep time.

STEP 1

Zest 1 teaspoon fresh lemon zest, and set aside.

From the same lemon, juice 2 tablespoons fresh lemon juice, and set aside. 

STEP 2

Toast 2 slices multigrain country bread. While your bread is toasting, cut 1 avocado in half. Using a chopping motion, firmly drive the back half of the knife blade (closer to your hand) into the pit, then twist to remove. Scoop out the avocado, place only half in a small glass mixing bowl, and mash. Cut the other half of the avocado into cubes, and set aside.

STEP 3

a) On a cutting board, remove shell from about 25 whole, salt & pepper seasoned pistachios.

b) Roughly chop salt & pepper roasted pistachios (see Note below) so you end up with about 2 tablespoons.

c) Then very roughly chop 2 tablespoons dried cranberries (keep them whole, if you prefer).  

Note: You can replace the salt & pepper roasted pistachios with roughly chopped walnuts.

STEP 4

This avocado mixture is supposed to be very chunky, so add the seasoning only to the mashed avocado (see Note below) in the bowl.

a) To the mashed avocado, add 1 pinch (or to taste) Himalayan salt, 1 pinch of ground black pepper, and 2 tablespoons fresh lemon juice.

b) Gently mix in the seasonings with the mash.

c) Add the pistachios and cranberries to the mashed avocado, and gently mix.

d) Once fairly evenly combined, gently fold the cubed avocado pieces into the mash (see Note below). 

Note: We like it a little chunky! Waiting to gently incorporate the avocado chunks at the very end of this step will prevent them from completely breaking down and will retain some texture in this dish. To reduce the amount of dishes used, we mixed them separately - but in one bowl. Whether you add the avocado cubes to the bowl at first (like in this photo) or later, just make sure to wait until the end to combine the avocado cubes so you end up with a much chunkier avocado spread.

STEP 5

When bread is finished toasting:

a) On a cutting board, cut each slice diagonally, and keep them together. Slicing the bread in advance will make it easier to prepare and serve. 

b) Spoon about ¼ of the avocado mixture onto each diagonal slice and gently spread to cover the bread.

c) Sprinkle prepared toast with the remaining pinch of Himalayan salt and 1 teaspoon fresh lemon zest. (Optional - Garnish with a few chopped pistachios and dried cranberries.)

d) Serve immediately and enjoy!

SERVING SUGGESTIONS

  • Pistachios and dried cranberries, topped as recommended above with lemon zest.

  • Walnuts and dried cranberries, topped with a sprinkling of dried mulberries and lemon zest.

    • If you have never tried dried mulberries, you are in for a treat! These strange looking little berries are a nutrient-dense superfood that adds an extra punch of flavor and texture to this avocado toast. They are sweet and a bit chewy in the center (similar to a textured raisin). Enjoy!

A bright and zesty twist on a Napa favorite!

This recipe was inspired by a wonderful little restaurant in Napa, California. Some years ago, my husband and I took a mini vacation to Napa Valley to celebrate our 1st wedding anniversary. It was our last day of the trip and our hotel recommended a quaint little spot on the way home to have brunch. 

Nestled in the heart of Carneros Valley, the Boon Fly Café sits right off of Sonoma Highway 12. The Boon Fly is known for its modern rustic cuisine, and believe me, this lovely little roadhouse has never disappointed. Driving up to the restaurant, the whimsical bright red barn greets you, as if to say you are in for a fun experience. The colorful and rustic architecture stands out from its surroundings and there is nothing stuffy about this place, as both the menu and the barn’s interior have been completely modernized. Visibly packed with people (which is always a good sign), we anxiously anticipated what the menu would be like. The fun began when we discovered their menu was full of unique twists on comfort foods. Even years later, we still remember the friendly service and our favorite dishes from the Boon Fly Café, and look forward to returning some day. Enough nostalgia!

Our version of avocado toast brings the sweet and savory flavors found in many Napa style recipes. This happened to be one of our favorite items on the Boon Fly’s menu and although we have altered the ingredients a bit, years later we are still making it.  

Filled with tons of healthy fats from the avocado and pistachios, we predict this deliciously bright and healthy Napa Avocado Toast will become a favorite of yours, too! To get the best results from our recipe, check out our tips below.

Our 5 tips to making this great avocado toast:

  1. Use only fresh ingredients.

  2. Good quality multi-grain country bread that has texture (or your favorite artisan bread).

  3. You can use any type of roughly chopped nuts, but our favorite nuts to use in this recipe are these salt & pepper roasted pistachios. An alternative to pistachios are walnuts, which complement the combination of flavors in this avocado toast recipe.

  4. Keep it chunky! Roughly chop your nuts and cranberries, and save some for the garnish. And, don’t mix in the avocado chunks until the last minute. 

  5. Don’t skip the lemon zest at the end. It adds a really bright finish.

  • Make it Gluten Free: Replace multigrain bread with a sturdy, country style gluten-free bread.

  • Make it a Meal: With the addition of nuts and cranberries, this is a meal in itself.

  • Make it Healthier: This healthy toast will become even healthier with the addition of another superfood, dried mulberries! Just sprinkle on a few as an additional garnish. Mulberries add another wonderful flavor and texture element to this dish.
